We are in Lazio, in Velletri, in the Castelli Romani area, between the Lepini mountains and the Pontine hills, facing the Tyrrhenian Sea, an area with a great tradition of artisan oil production.
We have chosen for you a little gem, the oil mill of the farm The Castelletto which produces the most precious oil, made only from olives harvested from the estate's olive groves that look out towards the sea. In short, a spectacle of olive groves with the oil mill in the middle. This allows the olives to be picked and immediately pressed.
The olives are ground mechanically and at room temperature, the cold pressing allows to maintain unalter the nutritional and physical characteristics of extra virgin olive oilpreserving the properties intact and enhancing the benefits once consumed.
At the Il Castelletto oil mill, only extra virgin olive oil is produced in an artisanal way in full respect of the law, only with their own olives and in quantities proportional to their olive groves.
