We are located in Sonnino, in the province of Latina (lower Lazio), an ancient medieval village that stands on the top of a hill, the extreme offshoot of Monte Ceraso. A magical land, rich in legends and myths, traditions and propitiatory rites.

It is said that Sonnino was a land of brigands and of an enigmatic past that resurfaces in the form of archaic and mystical symbolism linked to religion and the Monastic-Cavalry orders of the Middle Ages, as well as to erudite pilgrims who travelled the sacred ways. History is linked to wonderful landscapes, the land shows all its richness with the complicity of the climate, the sun. the sea breeze and the cool hills.

It is home to olive trees, olives and fine olive oil, so much so that it is considered the green gold of Agro Pontino. We are located by Gregorio De Gregorisa company with 60 years' experience in the olive oil industry, over 100-year-old olive groves inherited from father to son are the protagonists of this wonderful journey into the production of extra virgin olive oil characterised by the monocultivar Itrana (COLLINE PONTINE D.O.P.) several times awarded at various competitions.

The optimal soil and climatic conditions of the area, together with the attention paid to the selection of the olives, their preservation and pressing in the innovative installations, give this oil a superior quality also in terms of its chemical-organoleptic characteristics. Well-marked in colour, di Gregorio's extra virgin olive oil is medium to intense fruity, has balanced notes of bitterness and spiciness, and very low acidity, so much so that it is below the threshold for extra virgin olive oil. In addition to the certified 'Colline Pontine DOP' oil, characterised by the characteristic hint of green tomato, there are also the white and black Gaeta olives in brine and the classic, basil-flavoured or spicy Gaeta olive cream.

In Italy, it is said that 'of people more exterminates the throat than the sword...' and at Gregoris' we find the most profound explanation of this saying, when he starts showing us his 'jars'. In fact, De Gregoris loves his oil so much that he wanted to create mouth-watering variants by taking old recipes or searching for new combinations.

For lovers of strong flavours emerges Oliva Zen, a lemon, roman mint and ginger cream, suitable for seasoning pasta or for spreading on canapés. For those, on the other hand, who like more special and refined foods, we recommend Oliva D'Oriente in which turmeric and pepper, gluten-free, reign supreme. Epityrum (ancient Roman recipe), on the other hand, offers the palate an explosion of flavour heralded by inviting aromas: the protagonists of this delicacy are a perfect mix of wildflower honey, coriander, fennel seeds, mint, rue and wine vinegar.

Also gluten-free is the Oliva Arance, the mellowness of the olives blends perfectly with the freshness of the citrus fruit; a typical Sonnino recipe is the Oliva al Fumo, a favourite for those who love the green fruit in its entirety and would rather bite into it than spread it... Not forgetting the creams made with extra virgin olive oil.
